Rava idli
This one is a bit of an unconventional idli recipe - mainly because it can be prepared from start to end in under 30mins as the batter doesn't need fermentation yet the texture is spot on (if you get the steaming right).
Rava idli
Ingredients (makes about six pieces):
1 cup semolina
1 cup water
2 tablespoons yoghurt
Salt to taste
1 tablespoon (small packet) Eno fruit salt
1 cup water
2 tablespoons yoghurt
Salt to taste
1 tablespoon (small packet) Eno fruit salt
Method
1. Mix semolina, water, yoghurt, salt and leave aside covered for 15mins.
2. Add in eno to batter and stir.
3. Lightly oil idli pan (or a muffin tray / little bowls work too)
4. Scoop one to one and half tablespoons into each compartment of tray.
5. Place in steamer and steam for 10minutes. Alternatively if you have a samsung smart oven, use the "healthy cooking setting; 2-1, 300g" and steam it uncovered.
6. Serve hot with chutney

Tomato chutney
Fry together in ghee till aromatic and brown, then transfer to grinder and blend to a rough paste - 1 onion, 4 dried chilli, handful of curry leaves, 1 tomato, 1/2 tsp cumin, pinch of hing, 1/2 tsp mustard seeds, 1/2 cup grated coconut, 1 tsp tamarind. Add water when blending to adjust consistency.
