Pork rib and goji berries soup


Been going a little soup crazy since I got this fab ceramic coated pot in Seoul (it was super cheap no-name brand at $12 in a hypermarket yet distributes the heat better than fancier ones sitting in my cupboard). Also finding hearty soups like this super easy to put together when I come home after work - defrost meat/prep veg - head to the gym - come home, stick it all in pot to simmer - hit the showers, while my dinnet is done!

Ingredients (2 serves):
Approx. 200g or 8 pieces of pork spare ribs
2 potatoes (or white radish)
1 small sized carrot - chopped
A handful of dried shitake mushrooms
A handful of dried goji berries
1 onion - sliced finely
4 cloves garlic - flattened with back of knife
Spring onions - chopped
1 - 2 tablespoons of cider vinegar (to your taste)
1.5 tablespoon of light soy sauce (to your taste)

Method:
1. Soak shitake mushrooms in water and leave aside to soften.
2. In a dutch oven or ceramic soup pot, add cold water and pork ribs. Bring to boil for 10minutes. Rinse off water and ribs (this step ensures you will get a clear broth without sediments floating).
3. Heat 1 tablespoon oil in pot, saute onions and garlic until lightly browned. Add in pork ribs and potatoes, browning the sides.
4. Pour in water till it is a finger or two above the ribs.
5. Add in mushrooms, goji berries, carrot, vinegar and soy sauce.
6. Leave to simmer on low heat for 40 minutes.
7. Add in spring onions. Stir well. Leave for five minutes then serve.
