Spicy Fried Rice Noodles


Spicy Fried Rice Noodles (Kuey-teow Goreng)
Ingredients:
One packet rice noodles
Two eggs
spring onions
Chicken fillet - chopped into bite size pieces
Prawns - shelled
Onions - sliced
Garlic - chopped finely
Light soy sauce
Chilli boh or thick ground chilli paste
Oil
Salt to taste (omit if your soy sauce is salty)

Method:
1. Heat oil in wok and fry onions, garlic and chilli paste. Add chicken pieces and prawns, mix well. Salt to taste and leave to cook.
2. In a seperate bowl, stir in soy sauce with rice noodles. Throw it into the wok and increase the flame. Toss rice noodles well with ingredients. Make a little valley in the middle and break the eggs in. Quickly scramble the egg into rice noodles, tossing it a couple of times.
3. Throw in spring onions, give it a stir and remove off flame.
