Mango & Sago pudding

It's been a mango-licious month with this golden fruit in season and as the star of the joust. This dish is similar to the sticky-rice and mango combo I had posted earlier. But me figures this is much faster to make - less then 5 minutes in fact.


Mango and Sago pudding

Ingredients:
Small white sago pearls
Ripe mango - cut any way you like
Brown sugar
Thick coconut milk or evaporated milk
Pinch of salt


Method:
1. There are two ways you can prepare the sago. First, wash them clean and then put in a cloth lined steamer to steam till translucent. The faster second way would be to boil them with a pinch of salt until translucent and then strain liquid out.
2. Scoop sago on serving dish. Sprinkle brown sugar while sago is still warm and then drizzle milk on top. Top with cubed mangoes.

p/s: Hotels over here usually serve this traditional Malay dessert sans the Mango. All it takes is thick brown sugar syrup and coconut milk drizzled over the sago.
