Tuna Curry


This is my go to whenever there's leftover white rice in the fridge but I'm too lazy to cook. A simple yet hearty rich curry with that beloved canned fish...

Tuna Curry
Ingredients:
1 can tuna chunks - liquid drained
Oil
1 tablespoon meat curry powder
1 tablespoon kurma curry powder
2 tablespoons yogurt + 1/4 cup water or 1/2 cup milk
Salt to taste
Onions - sliced thinly
Tomatoes - chopped
1/4 lemon wedge

Method:
In sauce pan, heat oil and fry onions. Add chopped tomatoes and let it sweat. Add meat curry powder and kurma powder with a bit of water. After 3-5 minutes, add tuna chunks and mix well. Add yogurt or milk. Allow to thicken. Once thick, remove off heat. Spritz lemon juice into curry and mix well. Serve.

Interesting - I'd never have thought to use canned tuna in a curry before! But always have it in the cupboard, and always cook too much rice, so will try this out sometime!
