Stir-fried Lamb in Soy Sauce, Cheesy Mashed Potatoes & Pomegranate Raita

Read the roast chicken post dated 13 April and you'll understand how I ended up with this unlikely combo. Was planning on roast lamb chops with a side of roasted baby potatoes and salad. By the time I had tried removing crazy amount of fat on the underside, I was left with barely a handful of meat, the baby potatoes were so small that they all got squished while trying to peel them and as for the salad - mom kindly informed me that we had absolutely no vege left in the fridge! Though a disaster when it started out, ended up amazingly good!


1) Stir-fried Lamb in Soy Sauce
Ingredients:
2 Lamb fillets - cut into bite sized chunks
1 Onion - sliced thinly
Garlic - sliced thickly
3 tbsp - Worchestire Sauce
1 tbsp - Light soy sauce
1 tsp - Dark soy sauce
Lots of ground black pepper

Method:
Marinade the lamb chunks in worchestire sauce, light soy sauce, dark soy sauce and pepper. In a saucepan, fry onion slices and garlic along with a pinch of salt till caramelized golden. Add in lamb, a little water for gravy and leave to cook.


2) Cheesy Mash Potatoes
Ingredients:
2 medium sized Potatoes
A slosh of milk
1 tbsp cheddar cheese spread
Ground black pepper
Salt to taste

Method:
Boil potatoes till soft. Throw everything together in a bowl and unleash some of your stress by mashing them up!

3) Pomegranate Raita
Ingredients:
Beautiful ruby red Pomegranate
1/2 cup thick yogurt

Method:
Mix away!
