Lite chicken & salad rolls

For foodies like me, it's very hard to stay on the diet wagon. But there are ways to have something absolutely healthy and yummy on those days when we actually try to have at least one foot in!

Lite Chicken + Salad Rolls
For the chicken:
Chicken breast - thinly sliced
Pepper & salt to taste
2 tablespoons of lemon juice
Half a chilli - chopped finely or use chilli flakes
3 cloves garlic - chopped finely
>Marinade chicken with all the ingredients and leave for a minimum 15 minutes (would be a good time to start on the salad). Lightly coat pan with olive oil and cook chicken. Alternatively, add a couple of tablespoons of water and cook chicken in microwave for 7 minutes.

For the salad:
Butterhead lettuce
Purple romaine lettuce
Cherry tomatoes

> You could also easily get the pre-packed & prepped salad bowls they sell in supermarkets these days. Dress salad lightly with extra virgin olive oil and lemon juice and pepper.

The rolls part:
> Get some rice sheets. Place chopped up salad and chicken and roll! Simple! Or you can just have the chic & salad as it is (for those who are even more calorie concious).
