Italian Pork Rolls

Something to try for the weekend... :-)


Basic Italian pork rolls
Ingredients:
1/2 cup cream
8 slices bread - crusts removed and broken into small pieces
2 tbsp grated parmesan cheese
2 eggs
2 tbsp chopped parsley

Sundried tomatoes - soaked in warm water to soften and chopped
salt & pepper to taste
12 thin slices pork loin or schnitzel
3 tbsp olive oil
1 cup white wine
2 tomatoes - seeded and chopped
1 onion - chopped

Method:
Pour cream into a bowl and add bread. Leave to soak until bread is thoroughly wet. Squeeze bread gently and place in a seperate bowl with cheese and eggs. Add the parsley, sundried tomatoes and season with salt & pepper. Mix together the soft mixture and divide into portions and place onto pork slices. Roll the pork and secure with toothpicks. Brown the pork rolls on all sides for a few minutes. For sauce, brown onions in olive oil then add chopped tomatoes, white wine and season with salt & pepper. Drizzle sauce on top of pork rolls and serve.
