Double Spicy Aglio Olio
Just got back from Singapore last night. Decided I needed a much-deserved break and went down for the weekend to catch "We Will Rock You - Queen's greatest hits" musical featuring Mig Ayesa (who I soo loved on Rockstar Inxs). It was rockin!!! Thank god for budget airlines like AirAsia for affordable quickie trips like this without having to waste the time on a five hour bus ride.
Anyways, was on half day leave this morning, so slept in a bit today. Waking up to an empty house and hungry, put this together in a zombie-like state as the first caffeine jolt hadn't sunk in. It's one of my fave "for myself" pasta fixes and I've made it in a gazillion variations with tuna, shrimp, chicken or whatever is on hand. Somehow, the combo of bacon is still the best.
Double spicy Aglio Olio style Spaghetti
Ingredients:
Spaghetti (leftovers work awesome)
Pepper Bacon - cut roughly
Lots of garlic - chopped finely. I used about 5 cloves.
Chilli Flakes
A good dash of tabasco hot sauce
Parmesan cheese
Olive oil - generous slosh
Method:
Heat pan with olive oil. Fry choppd garlic on a medium heat till browned. Add bacon and chilli flakes and fry till crispy. Place spaghetti in a large bowl (has to be hot so if leftover, heat it up first). Dash in tobasco sauce. Pour in the fried ingredients as well as the olive oil. Give it a real good toss. Sprinkle in parmesan cheese as you toss. Serve.
